🥩 Herb-Crusted Prime Rib Roast

Ingredients
- 1 (3–4 bone) standing rib roast, about 7–9 lbs, bones frenched
- ½ cup unsalted butter, softened (or olive oil)
- 6–8 cloves garlic, minced
- 2 tbsp fresh rosemary, finely chopped
- 2 tbsp fresh thyme, finely chopped
- 2 tbsp coarse kosher salt
- 1 tbsp freshly cracked black pepper
Instructions
- Bring to Room Temperature: Remove the roast from the refrigerator 1–2 hours before cooking. Let it come to room temperature.
- Preheat the Oven: Preheat oven to 450°F (230°C).
- Make the Herb Paste: In a small bowl, combine the softened butter, garlic, rosemary, thyme, kosher salt, and black pepper. Mix until a thick herb paste forms.
- Coat the Roast: Pat the roast completely dry with paper towels. Rub the herb mixture evenly over the entire exterior.
- Sear the Crust: Place the roast bone-side down in a roasting pan. Roast at 450°F (230°C) for 15 minutes.
- Finish Roasting: Reduce the oven temperature to 325°F (160°C). Continue roasting until the internal temperature reaches 120–125°F (49–52°C) for medium-rare, approximately 1½–2 hours, depending on the size and shape of the roast.
- Rest & Carve: Transfer the roast to a cutting board, loosely tent with foil, and rest for 30 minutes before carving. Slice against the grain and serve warm.

For the most accurate doneness, use an instant-read or probe thermometer inserted into the thickest part of the roast, avoiding the bones. The temperature will continue to rise slightly while the roast rests.
