Creamy Tuscan Garlic Salmon 🐟🧄
Ingredients
- 4 salmon fillets
- 2 tbsp olive oil or butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 2 cups baby spinach
- ½ cup sun-dried tomatoes, chopped
- ⅓ cup grated Parmesan cheese
- Salt and black pepper, to taste
- ½ tsp paprika
- Lemon slices and fresh dill, for garnish
Instructions
- Season the Salmon: Season both sides of the salmon with salt, black pepper, and paprika.
- Sear: Heat olive oil or butter in a large skillet over medium-high heat. Sear the salmon for 4–5 minutes on each side, or until golden and cooked through. Remove and set aside.
- Make the Sauce: In the same skillet, sauté the garlic for about 1 minute. Add the heavy cream and bring to a gentle simmer.
- Add the Filling: Stir in the spinach, sun-dried tomatoes, and Parmesan. Cook for 2–3 minutes until the spinach wilts and the sauce becomes creamy.
- Combine: Return the salmon to the skillet and spoon the creamy sauce over the fillets. Simmer for 1–2 minutes.
- Serve: Garnish with lemon slices and fresh dill. Serve warm with your favorite side.
