Creamy Tuscan Garlic Salmon 🐟🧄

Ingredients

  • 4 salmon fillets
  • 2 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 cups baby spinach
  • ½ cup sun-dried tomatoes, chopped
  • ⅓ cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • ½ tsp paprika
  • Lemon slices and fresh dill, for garnish

Instructions

  1. Season the Salmon: Season both sides of the salmon with salt, black pepper, and paprika.
  2. Sear: Heat olive oil or butter in a large skillet over medium-high heat. Sear the salmon for 4–5 minutes on each side, or until golden and cooked through. Remove and set aside.
  3. Make the Sauce: In the same skillet, sauté the garlic for about 1 minute. Add the heavy cream and bring to a gentle simmer.
  4. Add the Filling: Stir in the spinach, sun-dried tomatoes, and Parmesan. Cook for 2–3 minutes until the spinach wilts and the sauce becomes creamy.
  5. Combine: Return the salmon to the skillet and spoon the creamy sauce over the fillets. Simmer for 1–2 minutes.
  6. Serve: Garnish with lemon slices and fresh dill. Serve warm with your favorite side.
