Cheesy Bacon Ranch Chicken

Ingredients
Chicken
- 3 large boneless, skinless chicken breasts, halved horizontally into cutlets
- 1 tbsp olive oil
- 1 packet (1 oz) ranch seasoning mix
- 1 tsp garlic powder
- Salt, to taste
- Freshly cracked black pepper, to taste
Toppings
- 1½ cups shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- 6 slices crispy cooked bacon, crumbled
- 2 tbsp fresh chives or green onions, finely chopped
Instructions
1. Prep & Season
Preheat the oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
Place the chicken cutlets in the dish or on a plate. Coat them evenly with olive oil, then season with ranch seasoning, garlic powder, salt, and black pepper.
2. Sear the Chicken — Optional
For extra flavor and color, heat a large skillet over medium-high heat. Sear the chicken for 2–3 minutes per side, just until golden brown.
You can skip this step and place the seasoned chicken directly into the baking dish.
3. Bake
Arrange the chicken in a single layer in the prepared baking dish.
Bake uncovered for 15–18 minutes, or until the chicken is almost cooked through.
4. Add Cheese & Bacon
Remove the baking dish from the oven. Sprinkle each chicken cutlet generously with mozzarella and cheddar cheese.
Top with the crumbled crispy bacon.
Return to the oven and bake for another 5–7 minutes, until the cheese is melted, bubbly, and lightly golden.
5. Garnish & Serve
Remove from the oven and sprinkle with freshly chopped chives or green onions.
Serve immediately while the chicken is hot and the cheese is gooey.
💡 Quick Tip
For the juiciest chicken, use a meat thermometer and cook until the thickest part reaches 165°F (74°C). Shredding the cheese yourself also helps it melt more smoothly.
