Spicy Pickled Vegetables 🌶️🥒

Ingredients
- 2 English cucumbers, thinly sliced
- 1 red onion, thinly sliced
- 1 orange bell pepper, thinly sliced
- 1 red chili pepper, thinly sliced
- ¼ cup fresh parsley or cilantro, chopped
- 1 cup white vinegar or apple cider vinegar
- 1 cup water
- ¼ cup sugar
- 1 tbsp kosher salt
- 1 tsp red pepper flakes
- 1 tsp mustard seeds
- ½ tsp black peppercorns
Instructions
- Thinly slice all the vegetables and pack them tightly into a clean glass jar. Add the chopped parsley or cilantro.
- In a small saucepan, combine the vinegar, water, sugar, salt, red pepper flakes, mustard seeds, and black peppercorns.
- Bring the mixture to a gentle simmer over medium heat, stirring until the sugar and salt are completely dissolved.
- Carefully pour the hot pickling liquid over the vegetables, making sure they are fully submerged.
- Let the jar cool to room temperature, then seal it tightly and refrigerate for at least 2 hours.
- Serve chilled. For an even deeper, more delicious flavor, leave the vegetables in the refrigerator for 24 hours before serving. 🌶️🥗
