Mixed Berry & Vanilla Cream Dessert Cups

Ingredients
Berry Coulis / Compote

1 ½ cups mixed berries (fresh or frozen raspberries, strawberries, blueberries)

2 tbsp lemon juice

2 tbsp sweetener of choice (honey, maple syrup, or granulated erythritol/stevia for low-carb)

1 tsp vanilla extract
Vanilla Cream Base

1 cup heavy whipping cream (chilled)

1 cup Greek yogurt or mascarpone cheese (room temperature)
-
3 tbsp powdered sweetener or powdered sugar
-
1 tsp vanilla bean paste or pure vanilla extract
Topping
-
Fresh strawberries (halved or whole)
-
Fresh raspberries
-
Fresh blueberries
Instructions
1. Prepare the Berry Coulis

In a small saucepan over medium heat, combine the mixed berries, lemon juice, and sweetener.

Cook for 6–8 minutes, stirring occasionally and lightly mashing the berries with a fork until they break down and release their juices.

Remove from heat, stir in the vanilla extract, and let cool completely. (For a completely smooth sauce, pass it through a fine-mesh strainer).
2. Whip the Vanilla Cream

In a large mixing bowl, whip the heavy cream and powdered sweetener together until soft peaks form.

Gently fold in the Greek yoghurt (or mascarpone) and vanilla bean paste until smooth, thick, and fully combined.
3. Assemble the Cups

Add a small spoonful of berry coulis to the bottom of 4 glass dessert cups.

Pipe or spoon the vanilla cream base into each cup, filling almost to the top.

Swirl additional berry coulis along the inside edges and top surface of the cream using a skewer or spoon handle.

Top generously with fresh strawberries, raspberries, and blueberries right before serving.
Storage & Tips

Make Ahead: The cream base and coulis can be made up to 2 days in advance and kept refrigerated in airtight containers. Assemble just before serving for the freshest berry texture.

Low-Carb / Keto Option: Use unsweetened Greek yoghurt or mascarpone paired with powdered monk fruit or erythritol to keep total carbs minimal.
