A creamy, fluffy, cheesecake-inspired protein dessert that’s perfect for meal prep! These strawberry protein fluff cups are sweet, light, and satisfying without needing a traditional cheesecake crust.
🛒 Ingredients
Makes 4 cups
- 1 cup strawberries, fresh or frozen
- 1 cup low-fat cottage cheese
- ½ cup plain Greek yogurt
- 1 scoop vanilla protein powder
- 2 tbsp sugar-free cheesecake or vanilla pudding mix
- 1–2 tbsp zero-calorie sweetener, to taste
- ½ tsp vanilla extract
- 2 tbsp milk, only if needed
- 2–3 fresh strawberries, sliced, for topping
👩🍳 Instructions
- Prepare the strawberries:
Wash and remove the tops from the strawberries. If using frozen strawberries, thaw them first. - Blend the base:
Add the strawberries, cottage cheese, Greek yogurt, vanilla protein powder, pudding mix, sweetener, and vanilla extract to a blender or food processor. - Blend until smooth:
Process for about 1–2 minutes, scraping down the sides as needed. The mixture should become completely smooth and creamy. - Adjust the texture:
If the mixture is too thick to blend, add 1 tablespoon of milk at a time until you reach a thick, fluffy consistency. Don’t add too much liquid. - Whip for extra fluff:
Transfer the mixture to a bowl and whisk vigorously for 1–2 minutes, or use a hand mixer briefly to make it lighter and fluffier. - Fill the cups:
Divide the strawberry cheesecake fluff between 4 small containers or dessert cups. - Add toppings:
Top with sliced strawberries. For extra cheesecake flavor, you can add a small sprinkle of crushed graham crackers. - Chill:
Cover and refrigerate for at least 1 hour. For meal prep, keep refrigerated until ready to eat.
🍓 Optional Toppings
- Fresh strawberries
- Crushed graham crackers
- Light whipped topping
- A few white chocolate chips
- Strawberry slices and a tiny drizzle of sugar-free strawberry syrup
❄️ Storage
Store covered in the refrigerator for up to 4 days. Keep the toppings separate if using graham crackers so they stay crunchy.
