Instructions
1. Roast the vegetables
Preheat the oven to 200°C / 400°F.
Place the sweet potato, butternut squash, carrots, and onion on a large baking tray. Add olive oil, garlic, thyme, oregano, paprika, salt, and black pepper. Toss thoroughly.
