🛒 Ingredients

Makes 4 cups

  • 1 cup strawberries, fresh or frozen
  • 1 cup low-fat cottage cheese
  • ½ cup plain Greek yogurt
  • 1 scoop vanilla protein powder
  • 2 tbsp sugar-free cheesecake or vanilla pudding mix
  • 1–2 tbsp zero-calorie sweetener, to taste
  • ½ tsp vanilla extract
  • 2 tbsp milk, only if needed
  • 2–3 fresh strawberries, sliced, for topping

  1. Prepare the strawberries:
    Wash and remove the tops from the strawberries. If using frozen strawberries, thaw them first.
  2. Blend the base:
    Add the strawberries, cottage cheese, Greek yogurt, vanilla protein powder, pudding mix, sweetener, and vanilla extract to a blender or food processor.
  3. Blend until smooth:
    Process for about 1–2 minutes, scraping down the sides as needed. The mixture should become completely smooth and creamy.
  4. Adjust the texture:
    If the mixture is too thick to blend, add 1 tablespoon of milk at a time until you reach a thick, fluffy consistency. Don’t add too much liquid.
  5. Whip for extra fluff:
    Transfer the mixture to a bowl and whisk vigorously for 1–2 minutes, or use a hand mixer briefly to make it lighter and fluffier.
  6. Fill the cups:
    Divide the strawberry cheesecake fluff between 4 small containers or dessert cups.
  7. Add toppings:
    Top with sliced strawberries. For extra cheesecake flavor, you can add a small sprinkle of crushed graham crackers.
  8. Chill:
    Cover and refrigerate for at least 1 hour. For meal prep, keep refrigerated until ready to eat.
