Smoked BBQ Stuffed Onions

Ingredients

  • 4 large sweet onions
  • 1 lb pork belly, finely diced
  • 1 cup shredded cheddar or gouda
  • 2–3 tbsp BBQ rub
  • ½ cup sweet BBQ sauce
  • Fresh chives or green onions, chopped

Instructions

  1. Peel the onions and cut off the top. Carefully hollow out the centers, leaving a 2–3-layer shell. Chop the removed onion.
  2. Cook the pork belly in a skillet until crispy. Drain excess grease.
  3. Mix the pork belly, chopped onion, BBQ rub, and cheese.
  4. Stuff each onion generously with the filling.
  5. Place onions upright on a baking sheet, using foil underneath for support. Bake or smoke at 350°F (175°C) for 45–50 minutes, until tender.
  6. Brush with BBQ sauce during the final 10 minutes.
  7. Garnish with chopped chives and serve hot.
