Smoked BBQ Stuffed Onions

Ingredients
- 4 large sweet onions
- 1 lb pork belly, finely diced
- 1 cup shredded cheddar or gouda
- 2–3 tbsp BBQ rub
- ½ cup sweet BBQ sauce
- Fresh chives or green onions, chopped
Instructions
- Peel the onions and cut off the top. Carefully hollow out the centers, leaving a 2–3-layer shell. Chop the removed onion.
- Cook the pork belly in a skillet until crispy. Drain excess grease.
- Mix the pork belly, chopped onion, BBQ rub, and cheese.
- Stuff each onion generously with the filling.
- Place onions upright on a baking sheet, using foil underneath for support. Bake or smoke at 350°F (175°C) for 45–50 minutes, until tender.
- Brush with BBQ sauce during the final 10 minutes.
- Garnish with chopped chives and serve hot.
