Slow Cooker Honey Garlic Pork Belly Bites

Ingredients

  • 2.5 lbs (1.1 kg) skinless pork belly, cut into 1.5-inch cubes

  • 1/2 cup honey

  • 1/2 cup low-sodium soy sauce

  • 1/3 cup dark brown sugar, packed

  • 5 cloves garlic, minced

  • 1 tbsp sesame oil

  • 1 tbsp apple cider vinegar

  • 1 tsp chili flakes or sriracha (optional, for heat)

  • 1/2 tsp ground ginger

  • 2 tbsp cornstarch mixed with 2 tbsp cold water (slurry)

  • Fresh green onions (sliced) and toasted sesame seeds (for garnish)

  • Salt and black pepper, to taste

Instructions

  1. Prep the Pork: Pat the pork belly cubes completely dry with paper towels. Season lightly with salt and black pepper.

  2. Make the Sauce: In a bowl, whisk together the honey, soy sauce, brown sugar, minced garlic, sesame oil, apple cider vinegar, ground ginger, and chili flakes until smooth.

  3. Slow Cook: Place the pork belly cubes inside the slow cooker insert. Pour the honey-garlic sauce over the meat, tossing to ensure all pieces are evenly coated. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours until tender.

  4. Thicken the Glaze: Carefully transfer the cooked pork belly bites to a plate. Pour the liquid from the slow cooker into a saucepan over medium-high heat. Whisk in the cornstarch slurry and simmer for 3–5 minutes until the sauce thickens into a glossy glaze.

  5. Crisp & Coat (Optional Broil): Place the pork belly bites on a foil-lined baking sheet, brush generously with the thickened glaze, and broil under high heat for 3–4 minutes until caramelized and sticky.

  6. Garnish & Serve: Toss the bites back into the thick glaze or platter them directly. Garnish generously with sliced green onions and toasted sesame seeds. Serve hot over steamed jasmine rice.
