Slow Cooker Honey Garlic Glazed Beef Roast

Ingredients

  • 2–3 lb beef chuck roast

  • ½ cup beef broth

  • ¼ cup honey

  • ¼ cup brown sugar

  • ¼ cup soy sauce (low-sodium preferred)

  • 5–6 cloves garlic, minced

  • 1 tsp fresh ginger, grated (or ½ tsp ground ginger)

  • 1 tbsp Worcestershire sauce

  • ½ tsp black pepper

  • 1 tbsp cornstarch

  • 2 tbsp cold water

  • Optional garnish: Sliced green onions, toasted sesame seeds

Instructions

  1. Prep the meat: Place the beef chuck roast into the bottom of a 5- to 6-quart slow cooker.

  2. Make the sauce: In a medium bowl, whisk together beef broth, honey, brown sugar, soy sauce, minced garlic, ginger, Worcestershire sauce, and black pepper. Pour the mixture evenly over the beef.

  3. Slow cook: Cover with the lid and cook on LOW for 7 to 8 hours (or HIGH for 4 to 5 hours) until the beef is fork-tender and shreds easily.

  4. Make the glaze: Transfer the cooked beef to a cutting board and tent loosely with foil. In a small ramekin, whisk cornstarch and cold water together until completely smooth. Pour the slurry into the slow cooker liquid, whisking thoroughly to combine.

  5. Thicken: Cover and cook the sauce on HIGH for 15 to 20 minutes until it thickens into a glossy glaze. (Alternatively, pour the liquid and slurry into a small saucepan and simmer over medium heat on the stove for 4–5 minutes for a faster reduction).

  6. Coat: Shred or slice the beef into large chunks, return it to the slow cooker, and toss to coat thoroughly in the warm glaze.

  7. Caramelize (Optional step): For crispy, caramelized edges, transfer the shredded, glazed beef onto a foil-lined baking sheet. Spoon extra glaze over the top and broil on HIGH for 3 to 5 minutes until sticky and browned.

  8. Serve: Garnish with fresh green onions and toasted sesame seeds. Serve over steamed jasmine rice, mashed potatoes, or alongside roasted green beans.
