RECIPE FOR CREAMY STRAWBERRY POPSICLES – SO EASY 😱
Ingredients
For the popsicles:
500g plain Greek yogurt
400g fresh strawberries
2–3 tablespoons honey, sugar, or sweetened condensed milk (optional, to taste)
1 teaspoon vanilla extract (optional)
For the coating:
200g semi-sweet or milk chocolate
1–2 tablespoons coconut oil or neutral vegetable oil
Preparation
1. Prepare the strawberries. Wash and disinfect the strawberries thoroughly, remove the stems, and cut them into pieces. Blend them in a blender or food processor until you have a puree. If you want the popsicles to have more texture, leave some small pieces of strawberry.
2. Prepare the mixture. Place the Greek yogurt in a bowl and add the strawberry puree. Add honey, sugar, or sweetened condensed milk if you want sweeter popsicles. Add the vanilla and gently mix until you have a smooth, creamy mixture.
3. Fill the molds. Pour the mixture into popsicle molds, leaving a little space at the top. Insert the sticks and gently tap the molds to remove any air bubbles.
4. Freeze. Place in the freezer for 4–6 hours, or preferably until the popsicles are completely firm.
5. Prepare the chocolate. Melt the 200g of chocolate in a double boiler or in the microwave in short bursts. Add the coconut oil or vegetable oil and mix until smooth, glossy, and slightly runny.
6. Coat the popsicles. Remove the frozen popsicles from the molds and quickly dip them into the melted chocolate. Because they are very cold, the chocolate will begin to harden almost immediately. If desired, quickly sprinkle with dried strawberries or nuts before the coating solidifies.
7. Serve or store. Place the popsicles back in the freezer for 10–15 minutes to allow the coating to fully harden. Keep them frozen until ready to serve.
Tip for extra creaminess: Use full-fat Greek yogurt, not low-fat. You can also add 2 tablespoons of sweetened condensed milk; in addition to sweetness, it helps to make the inside softer and less icy.
