Pickled Cucumber & Cherry Tomato Salad
This quick-pickled salad combines crisp cucumber rounds, juicy cherry tomatoes, sliced red onions, fresh dill, and red pepper flakes in a tangy herb brine.
Ingredients

1 English cucumber, thinly sliced into rounds

½ cup apple cider vinegar (or white vinegar)

1 tbsp olive oil

1 tbsp honey or sugar

Preparation

Pack the Jar: Layer the sliced cucumber, cherry tomatoes, red onion, and fresh dill into a clean, 32 oz wide-mouth glass jar.

Whisk the Dressing: In a bowl, whisk together the vinegar, water, olive oil, honey, sea salt, black pepper, and red pepper flakes until the honey and salt dissolve completely.

Pour and Seal: Pour the brine mixture into the jar over the vegetables, ensuring everything is submerged. Seal the lid tightly.
