2 cups Graham cracker crumbs (or crushed digestives/Vanilla Wafers)

Creamy Cheesecake Layer

16 oz (450g) cream cheese, softened to room temperature

1 cup dulce de leche or thick caramel sauce (divided)

1 cup powdered sugar

1 tsp vanilla extract

1½ cups heavy whipping cream (whipped to stiff peaks)
Topping & Caramel Layer

½ cup caramel sauce (dulce de leche or thick jarred caramel)

1 cup semi-sweet dark chocolate chunks or chips

1 cup pecans, toasted and chopped
Instructions

Make the Crust: Mix graham cracker crumbs, melted butter, and brown sugar until thoroughly combined. Press firmly into an even layer at the bottom of a 9×13-inch glass baking dish. Freeze for 10 minutes to set.

Prepare the Cream Layer: In a large bowl, beat the cream cheese, ½ cup of caramel, powdered sugar, and vanilla extract until smooth and completely lump-free. Gently fold in the whipped heavy cream until uniform.

Assemble Cream Layer: Spread the cream cheese mixture evenly over the chilled crust using a spatula.

Add Caramel & Toppings: Drizzle the remaining ½ cup of caramel sauce evenly over the cream layer. Top generously with the dark chocolate chunks and toasted chopped pecans.

Chill & Serve: Cover the dish and refrigerate for at least 4 hours (or overnight) until firm before slicing into squares.
