Crispy Zucchini Chicken Patties with Creamy Herb Dip

Ingredients
Ground chicken: 1 lb (450 g)
Zucchini: 1 medium, grated and squeezed dry
Parmesan cheese: ½ cup, grated
Garlic powder: 1 tsp
Egg: 1 large
Salt and pepper: ½ tsp salt, ¼ tsp pepper
Olive oil: 2 tbsp (for cooking)
Sour cream or Greek yogurt: ½ cup (for sauce)
Fresh dill or parsley: 2 tbsp, finely chopped (for sauce)
Instructions
1. Prep the zucchini: Shred the zucchini, wrap it in a clean kitchen towel or paper towel, and squeeze out as much moisture as possible.
2. Mix the patties: In a bowl, combine the ground chicken, dried zucchini, Parmesan cheese, garlic powder, egg, salt, and pepper until uniform. Form into 8 equal patties.
3. Cook: Heat olive oil in a non-stick skillet over medium heat. Fry patties for 4–5 minutes on each side until crisp, golden-brown, and cooked through to an internal temperature of 165°F (74°C).
4. Make the sauce: In a small bowl, stir together the sour cream (or Greek yogurt), fresh chopped herbs, a pinch of salt, and a pinch of pepper.
