🛒 Necessary Ingredients

  • 2 red beets, peeled and thinly sliced
  • 2 golden beets, peeled and thinly sliced
  • 1 large sweet potato, thinly sliced
  • 1 parsnip or white sweet potato, thinly sliced
  • 3 tbsp olive oil
  • 1 tbsp balsamic glaze
  • ½ cup crumbled goat cheese or feta
  • ½ cup walnuts
  • 1 tsp fresh thyme
  • Salt and black pepper, to taste

  1. Prepare: Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Arrange: Stack and overlap the sliced beets, sweet potato, and parsnip vertically in alternating colors, creating neat rows.
  3. Season: Drizzle with olive oil and balsamic glaze. Sprinkle with thyme, salt, and black pepper.
  4. Bake: Cover tightly with foil and bake for 35 minutes, until the vegetables begin to soften.
  5. Add Toppings: Remove the foil and scatter goat cheese and walnuts over the top.
  6. Finish Roasting: Bake uncovered for another 10–15 minutes, until the walnuts are toasted and the vegetable edges are lightly crisp.
