🛒 Necessary Ingredients
- 2 red beets, peeled and thinly sliced
- 2 golden beets, peeled and thinly sliced
- 1 large sweet potato, thinly sliced
- 1 parsnip or white sweet potato, thinly sliced
- 3 tbsp olive oil
- 1 tbsp balsamic glaze
- ½ cup crumbled goat cheese or feta
- ½ cup walnuts
- 1 tsp fresh thyme
- Salt and black pepper, to taste
👩🍳 Instructions
- Prepare: Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- Arrange: Stack and overlap the sliced beets, sweet potato, and parsnip vertically in alternating colors, creating neat rows.
- Season: Drizzle with olive oil and balsamic glaze. Sprinkle with thyme, salt, and black pepper.
- Bake: Cover tightly with foil and bake for 35 minutes, until the vegetables begin to soften.
- Add Toppings: Remove the foil and scatter goat cheese and walnuts over the top.
- Finish Roasting: Bake uncovered for another 10–15 minutes, until the walnuts are toasted and the vegetable edges are lightly crisp.
