For the Cheesecake Batter
- 250g (9 oz) cream cheese, softened
- 50g (¼ cup) unsalted butter
- 100ml (⅓ cup + 1 tbsp) whole milk
- 6 large eggs, separated
- 70g (½ cup) cake flour
- 20g (3 tbsp) cornstarch
- 120g (½ cup + 2 tbsp) granulated sugar
- 1 tsp vanilla extract
- 1 tsp fresh lemon juice
- ¼ tsp salt

👩🍳 Instructions
- Prepare the pan: Preheat your oven to 150°C (300°F). Line the bottom and sides of an 8-inch round cake pan with parchment paper.
- Make the cream cheese mixture: In a heatproof bowl over simmering water, melt the cream cheese, butter, and milk together. Stir until smooth. Remove from heat and let it cool slightly.
- Add the egg yolks: Whisk the egg yolks into the cream cheese mixture along with vanilla extract, lemon juice, and salt.
- Add dry ingredients: Sift in the cake flour and cornstarch. Whisk gently until smooth and lump-free.
- Whip the egg whites: In a separate clean bowl, beat the egg whites until foamy. Gradually add the sugar and continue beating until soft peaks form.
- Fold gently: Fold one-third of the whipped egg whites into the batter to lighten it. Then gently fold in the remaining egg whites in two additions.
- Prepare a water bath: Pour the batter into the prepared pan. Place the cake pan inside a larger baking dish and carefully add hot water to the outer dish.
- Bake: Bake for about 1 hour 20 minutes, until the cheesecake is golden, puffed, and gently set in the center.
- Cool slowly: Turn off the oven and leave the cheesecake inside with the door slightly open for about 15 minutes. Remove and let it cool completely.
- Serve: Dust with powdered sugar and top with fresh berries if desired. Slice gently and enjoy the soft, fluffy texture!
