Garlic-Herb Marinated Tomato Salad

Ingredients

 4 medium ripe tomatoes, sliced into thick rounds

 4 cloves garlic, finely minced

 1/2 cup fresh parsley (or cilantro), finely chopped

 3 tbsp extra virgin olive oil

 1 tbsp fresh lemon juice

 1/2 tsp salt & 1/4 tsp black pepper

Instructions

1. Make Dressing: In a small bowl, whisk together minced garlic, chopped parsley, olive oil, lemon juice, salt, and black pepper.

2. Layer & Dress: Lay the tomato slices in a single layer in a serving dish and spoon the herb-garlic oil generously over each slice.

3. Marinate: Let the salad rest at room temperature for 15–20 minutes so the juices release and the garlic infuses into the tomatoes before serving.
