Prep Time: 15 mins | Cook Time: 4–6 hrs | Yield: 6 servings
Ingredients
-
2.5 lbs (1.1 kg) skinless pork belly, cut into 1.5-inch cubes
-
1/2 cup honey
-
1/2 cup low-sodium soy sauce
-
1/3 cup dark brown sugar, packed
-
5 cloves garlic, minced
-
1 tbsp sesame oil
-
1 tbsp apple cider vinegar
-
1 tsp chili flakes or sriracha (optional, for heat)
-
1/2 tsp ground ginger
-
2 tbsp cornstarch mixed with 2 tbsp cold water (slurry)
-
Fresh green onions (sliced) and toasted sesame seeds (for garnish)
-
Salt and black pepper, to taste
Instructions
-
Prep the Pork: Pat the pork belly cubes completely dry with paper towels. Season lightly with salt and black pepper.
-
Make the Sauce: In a bowl, whisk together the honey, soy sauce, brown sugar, minced garlic, sesame oil, apple cider vinegar, ground ginger, and chili flakes until smooth.
-
Slow Cook: Place the pork belly cubes inside the slow cooker insert. Pour the honey-garlic sauce over the meat, tossing to ensure all pieces are evenly coated. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours until tender.
-
Thicken the Glaze: Carefully transfer the cooked pork belly bites to a plate. Pour the liquid from the slow cooker into a saucepan over medium-high heat. Whisk in the cornstarch slurry and simmer for 3–5 minutes until the sauce thickens into a glossy glaze.
-
Crisp & Coat (Optional Broil): Place the pork belly bites on a foil-lined baking sheet, brush generously with the thickened glaze, and broil under high heat for 3–4 minutes until caramelized and sticky.
-
Garnish & Serve: Toss the bites back into the thick glaze or platter them directly. Garnish generously with sliced green onions and toasted sesame seeds. Serve hot over steamed jasmine rice.
