Crispy Zucchini Fritters

Crispy Zucchini Fritters

Description

Crispy Zucchini Fritters are golden, savory patties made with freshly grated zucchini, herbs, cheese, and a light coating of flour. They’re crisp on the outside, tender and flavorful inside, and make an excellent breakfast, snack, appetizer, or light meal.

Servings

4 servings (about 10–12 fritters)

Preparation & Cooking Time

  • Prep: 15 minutes
  • Rest/drain: 10 minutes
  • Cook: 15–20 minutes
  • Total: About 40–45 minutes

Ingredients

  • 3 medium zucchini, about 600–700 g
  • ½ teaspoon salt, plus more if needed
  • 2 large eggs
  • ½ cup all-purpose flour
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons finely chopped fresh parsley
  • 2 tablespoons finely chopped green onion
  • 2 cloves garlic, minced
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ¼ teaspoon chili flakes, optional
  • ½ teaspoon baking powder
  • 2–3 tablespoons cooking oil, for frying

Optional Yogurt Dip

  • ½ cup Greek yogurt or thick plain yogurt
  • 1 tablespoon lemon juice
  • 1 small garlic clove, minced
  • 1 tablespoon chopped fresh dill or parsley
  • Pinch of salt
  • Pinch of black pepper

Instructions

1. Grate the zucchini

Wash and grate the zucchini using the large holes of a box grater. Place the grated zucchini in a bowl and sprinkle with ½ teaspoon salt.

Let it stand for about 10 minutes. The salt will draw out excess moisture.

2. Remove excess water

Place the zucchini in a clean kitchen towel or cheesecloth and squeeze firmly to remove as much liquid as possible.

This is the most important step for crispy fritters. Wet zucchini will produce soft, soggy fritters.

3. Make the batter

Transfer the squeezed zucchini to a large bowl.

Add:

  • eggs
  • flour
  • Parmesan
  • parsley
  • green onion
  • garlic
  • black pepper
  • oregano
  • chili flakes
  • baking powder

Mix until everything is evenly combined. The mixture should be moist but thick enough to hold its shape.

4. Heat the pan

Heat 1–2 tablespoons of oil in a large nonstick or cast-iron skillet over medium heat.

The oil should be hot enough that a small drop of batter sizzles immediately when added.

5. Form the fritters

Scoop approximately 2 tablespoons of batter per fritter into the pan.

Flatten gently with the back of a spoon so each fritter is about ½-inch thick.

Avoid overcrowding the pan.

6. Fry until golden and crispy

Cook for about 3–4 minutes per side, or until the fritters are deep golden brown and crisp around the edges.

Adjust the heat as necessary. If they brown too quickly, reduce the heat slightly.

7. Drain

Transfer the cooked fritters to a plate lined with paper towels or, preferably, a wire rack.

Repeat with the remaining batter, adding a little more oil as needed.

8. Prepare the dip

Mix the yogurt, lemon juice, garlic, dill or parsley, salt, and pepper in a small bowl.

Taste and adjust the seasoning.

9. Serve

Serve the zucchini fritters immediately while they’re hot and crispy, with the yogurt dip on the side.

Recipe Notes

  • Squeeze the zucchini extremely well. Excess moisture is the biggest reason zucchini fritters become soggy.
  • Parmesan adds flavor and helps the fritters develop a beautiful golden crust.
  • Don’t make the fritters too thick; thinner patties become noticeably crispier.
  • Fry in batches rather than overcrowding the pan.
  • A wire rack is better than paper towels for keeping the bottom crispy.
  • If the batter seems too wet, add another 1–2 tablespoons of flour.
  • If the batter seems too dry, add a small amount of beaten egg.
  • Zucchini varies considerably in water content, so the amount of flour may need slight adjustment.

Tips for Extra-Crispy Fritters

  1. Salt and drain the zucchini first.
  2. Squeeze out as much water as possible.
  3. Use medium heat, not very low heat.
  4. Make relatively thin fritters.
  5. Don’t overcrowd the skillet.
  6. Let the first side develop a firm golden crust before flipping.
  7. Place finished fritters on a wire rack, not directly on a plate.

Benefits

  • Zucchini provides fiber and micronutrients: It contributes vitamin C, potassium, and other nutrients while keeping the fritters relatively light.
  • Eggs and Parmesan provide protein: They help make the fritters more satisfying.
  • Fresh herbs and garlic add flavor: You can get a lot of flavor without relying on heavy sauces.
  • Versatile meal option: They work as a breakfast, side dish, appetizer, lunch, or snack.
  • Easy way to enjoy more vegetables: The zucchini forms the main ingredient rather than simply being an addition.

Variations

Spicy Zucchini Fritters

Add ½–1 teaspoon chili flakes or a finely chopped green chili.

Mediterranean Style

Add fresh dill, mint, crumbled feta, and a little lemon zest.

Cheesy Fritters

Replace some of the Parmesan with shredded mozzarella or cheddar.

Gluten-Free

Use a gluten-free all-purpose flour blend or chickpea flour instead of regular flour.

Herb & Garlic

Increase the fresh parsley and add fresh dill, basil, or cilantro.

Frequently Asked Questions

Q: Why are my zucchini fritters soggy?
A: Most often, the zucchini contained too much water. Salt it, let it stand, and squeeze it very thoroughly before making the batter.

Q: Can I make the batter ahead of time?
A: It’s best to cook the fritters soon after preparing the batter. If necessary, refrigerate the mixture briefly, but additional liquid may be released and you may need a little more flour.

Q: Can I bake zucchini fritters instead of frying them?
A: Yes. Place them on a lightly oiled baking sheet, flatten them, brush or spray lightly with oil, and bake at about 220°C / 425°F until golden, flipping halfway through. They won’t be quite as crisp as pan-fried fritters.

Q: Can I freeze zucchini fritters?
A: Yes. Cool them completely, freeze them in a single layer, then transfer to a freezer-safe container. Reheat in an oven or air fryer for the best texture.

Q: Can I use yellow squash instead of zucchini?
A: Yes. Yellow summer squash works very well, although you should still squeeze out as much moisture as possible.

Q: What should I serve with zucchini fritters?
A: Garlic yogurt, tzatziki, sour cream, lemon yogurt sauce, fresh salad, or a poached egg are all excellent choices.

Q: How do I keep them crispy after cooking?
A: Place them on a wire rack in a single layer. If preparing a large batch, keep them warm in a low oven rather than stacking them on a plate.

Chef’s Tip

For the crispiest possible zucchini fritters, don’t rush the draining step. After squeezing the zucchini in a towel, let it sit for another minute and squeeze it once more. The drier the zucchini, the more beautifully the fritters will brown and crisp.
