Baked Blueberry Cottage Cheese Breakfast Bowl

1 cup cottage cheese

1 tbsp honey (or maple syrup)

¼ tsp vanilla extract

¼ cup fresh or frozen blueberries

1 tbsp rolled oats (optional, for texture)

Dusting of powdered sugar (optional, for garnish)
Instructions

Prep the Oven: Preheat your oven to 350°F (175°C). Lightly grease a small, oven-safe ramekin or jar.

Blend the Base: Add the cottage cheese, egg, honey (or maple syrup), and vanilla extract to a blender. Process until completely smooth and creamy. (Note: You can also just whisk thoroughly in a bowl if you don’t mind the natural texture of cottage cheese curds).

Mix in Extras: Stir in the optional rolled oats and a pinch of cinnamon. Fold in half of the blueberries.

Assemble: Pour the mixture into your prepared ramekin. Top with the remaining blueberries.

Bake: Bake at 350°F (175°C) for 20 to 25 minutes, until the center is set and the edges are lightly puffed and golden brown.
