- 2 cups rolled oats
- 1 ripe banana, mashed
- 0.5 cups unsweetened applesauce
- 0.3 cups honey or maple syrup
- 0.3 cups unsweetened cocoa powder
- 1 teaspoons vanilla extract
- 0.5 teaspoons baking powder
- 0.3 teaspoons salt
- 0.3 cups dark chocolate chips (60-70% cacao)
- 2 tablespoons milk of choice (as needed for consistency)
Steps
Preheat and prep pan: Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on the sides for easy removal.
Mix the batter: In a large bowl, mix 2 cups rolled oats, 1 ripe banana, mashed, 0.5 cups unsweetened applesauce, 0.3 cups honey or maple syrup, 0.3 cups unsweetened cocoa powder, 1 teaspoons vanilla extract, 0.5 teaspoons baking powder, and 0.3 teaspoons salt until well combined. If the mixture seems too thick, add 2 tablespoons milk of choice (as needed for consistency) a little at a time.
Add chocolate chips: Fold in 0.3 cups dark chocolate chips (60-70% cacao), reserving a small handful to sprinkle on top.
Transfer to pan: Spread the mixture evenly into the prepared pan and press down firmly. Sprinkle the reserved chocolate chips on top.
Bake: Bake until the edges are set and lightly golden, about 19 minutes . The center should still look slightly soft.
Cool and slice: Let the bars cool completely in the pan, about 20 minutes , before lifting out and slicing into 12 bars.
