🛒 Ingredients

For the Beef

  • 2½–3 lb beef chuck roast
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme

For the Garlic Butter Gravy

  • 4 cloves garlic, minced
  • 3 tbsp butter
  • 1 cup beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp all-purpose flour
  • 1 tbsp brown sugar
  • 1 tsp Dijon mustard

For the Vegetables

  • 1½ lb baby potatoes
  • 4 carrots, cut into large chunks
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • Fresh thyme or parsley, for garnish

1. Season the Beef
Pat the beef dry with paper towels. Rub thoroughly with olive oil, salt, pepper, paprika, and thyme. Let it rest at room temperature for about 20 minutes.

2. Sear Until Golden 🔥
Heat a large oven-safe skillet or Dutch oven over medium-high heat. Sear the beef for 3–4 minutes on each side, including the edges, until deeply browned.

3. Prepare the Garlic Butter Gravy 🧄
Reduce the heat and add butter and minced garlic around the beef. Cook for 30–60 seconds until fragrant. Sprinkle in the flour and stir. Gradually whisk in the beef broth, Worcestershire sauce, brown sugar, and Dijon mustard until smooth.

4. Add the Vegetables 🥔🥕
Arrange the baby potatoes and carrots around the roast. Drizzle them with olive oil and season with salt and pepper. Toss gently with the flavorful pan juices.

5. Slow Roast 🍽️
Cover loosely with foil and roast at 325°F (165°C) for approximately 3–4 hours, or until the chuck roast is fork-tender. Add a little extra broth if needed during cooking.

6. Baste & Caramelize
During the final 20–30 minutes, remove the foil. Spoon the garlic-butter gravy over the beef and vegetables several times. Continue roasting until everything is beautifully browned and glossy.

7. Rest the Beef
Remove the roast from the oven and let it rest for 15 minutes before slicing or shredding.
