Crispy Parmesan Garlic Roasted Cauliflower
Ingredients
- 1 head cauliflower, cut into medium bite-sized florets
- 1/2 cup grated Parmesan cheese
- 3 tbsp olive oil
- 1 tbsp garlic powder
- 1 tsp paprika or smoked paprika
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, finely chopped (for garnish)
Dipping Sauce
- 1/2 cup sour cream or Greek yogurt
- 2 tbsp mayonnaise
- 1 tsp lemon juice
- 1/2 tsp garlic powder
- 1/2 tsp dried dill or chives
- Salt and black pepper, to taste
Instructions
- Preheat Oven: Set your oven to 200°C (400°F) and line a large baking sheet with parchment paper.
- Season Cauliflower: Place the cauliflower florets in a large bowl. Add the olive oil, garlic powder, paprika, onion powder, salt, and black pepper. Toss well until the florets are evenly coated.
- Add Parmesan: Sprinkle the grated Parmesan cheese over the seasoned cauliflower and toss gently to coat each piece.
- Roast: Spread the florets in a single layer on the prepared baking sheet, ensuring they aren’t overcrowded. Roast for 25–30 minutes, flipping halfway through, until the edges are golden brown and crispy.
- Prepare Dipping Sauce: While the cauliflower roasts, whisk together the sour cream (or Greek yogurt), mayonnaise, lemon juice, garlic powder, dried dill, salt, and pepper in a small bowl.
- Serve: Transfer the roasted cauliflower to a serving dish, sprinkle with fresh parsley, and serve hot with the dip on the side.
