Slow Cooker Balsamic Glazed Pot Roast
Ingredients
- 3–4 lb boneless beef chuck roast
- 1 cup beef broth
- ½ cup balsamic vinegar
- ⅓ cup brown sugar or honey
- 1 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 3–4 cloves garlic, minced
- ½ tsp crushed red pepper flakes, optional
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp cornstarch
- 1 tbsp water
Instructions
1. Prepare the Sauce
In a bowl, whisk together the beef broth, balsamic vinegar, brown sugar, soy sauce, Worcestershire sauce, minced garlic, red pepper flakes, salt, and black pepper.
2. Add the Roast
Place the beef chuck roast into the slow cooker. Pour the balsamic mixture evenly over the roast.
3. Slow Cook
Cover and cook on LOW for 8 hours or HIGH for about 5 hours, until the beef is fork-tender and easily pulls apart.
4. Make the Balsamic Glaze
Transfer the roast to a serving plate and skim excess fat from the cooking liquid. Pour about 1 cup of the remaining liquid into a small saucepan.
Mix the cornstarch with 1 tablespoon water to make a smooth slurry. Whisk it into the saucepan and simmer over medium heat for 3–5 minutes, stirring frequently, until the sauce becomes thick, dark, and glossy.
5. Serve
Serve the roast whole or gently shred it with two forks. Spoon the warm balsamic glaze generously over the beef.
