Pickled Cucumber & Cherry Tomato Salad

This quick-pickled salad combines crisp cucumber rounds, juicy cherry tomatoes, sliced red onions, fresh dill, and red pepper flakes in a tangy herb brine.

Ingredients

  • 1 English cucumber, thinly sliced into rounds

  • 1 cup cherry tomatoes, halved

  • ½ small red onion, thinly sliced

  • 3 tbsp fresh dill, chopped

  • ½ tsp red pepper flakes

  • ½ cup apple cider vinegar (or white vinegar)

  • ½ cup water

  • 1 tbsp olive oil

  • 1 tbsp honey or sugar

  • 1 tsp sea salt

  • ½ tsp cracked black pepper

Preparation

  1. Pack the Jar: Layer the sliced cucumber, cherry tomatoes, red onion, and fresh dill into a clean, 32 oz wide-mouth glass jar.

  2. Whisk the Dressing: In a bowl, whisk together the vinegar, water, olive oil, honey, sea salt, black pepper, and red pepper flakes until the honey and salt dissolve completely.

  3. Pour and Seal: Pour the brine mixture into the jar over the vegetables, ensuring everything is submerged. Seal the lid tightly.

  4. Chill and Marinate: Shake the jar gently to distribute the seasonings. Refrigerate for at least 30 minutes before serving. Store covered in the fridge for up to 5 days
