Ingredients

For the vegetable filling

  • 2 medium sweet potatoes, peeled and cut into small cubes
  • 2 cups butternut squash, peeled and cubed
  • 3 large carrots, peeled and sliced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • ½ tsp ground black pepper
  • ½ tsp salt, or to taste
  • ¼ tsp ground nutmeg
  • ½ tsp paprika
  • 2 tbsp fresh parsley, chopped

For the creamy sauce

  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 3 cups milk
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp nutmeg
  • ½ cup grated Parmesan cheese

For the lasagna

  • 9–12 lasagna sheets, depending on the size of your dish
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup ricotta cheese, optional
  • 2 tbsp chopped fresh parsley or basil, for garnish

Instructions

1. Roast the vegetables

Preheat the oven to 200°C / 400°F.

Place the sweet potato, butternut squash, carrots, and onion on a large baking tray. Add olive oil, garlic, thyme, oregano, paprika, salt, and black pepper. Toss thoroughly.

Roast for 25–30 minutes, stirring once halfway through, until the vegetables are tender and lightly caramelized.

Remove from the oven and gently mash about one-third of the vegetables with a fork. Keep the rest in pieces for texture.

2. Make the creamy sauce

Melt the butter in a saucepan over medium heat.

Whisk in the flour and cook for about 1 minute.

Gradually add the milk while whisking continuously to prevent lumps. Cook for 5–7 minutes, stirring frequently, until the sauce thickens enough to coat the back of a spoon.

Season with salt, pepper, and nutmeg. Stir in the Parmesan until melted.

Remove from the heat.

3. Prepare the lasagna sheets

Cook the lasagna sheets according to the package directions if using regular dried sheets. Drain and lay them separately so they don’t stick together.

If using oven-ready sheets, they can usually be layered directly into the dish according to the package instructions.

4. Assemble the lasagna

Lightly grease a 9 × 13-inch (23 × 33 cm) baking dish.

Spread a thin layer of the creamy sauce over the bottom.

Add:

  1. A layer of lasagna sheets
  2. A layer of roasted vegetable mixture
  3. A layer of creamy sauce
  4. A sprinkle of mozzarella and Parmesan

Repeat the layers until the ingredients are used, finishing with creamy sauce and plenty of mozzarella and Parmesan on top.

If using ricotta, dot small spoonfuls between the vegetable layers.

5. Bake

Cover the dish loosely with aluminum foil and bake at 190°C / 375°F for 25 minutes.

Remove the foil and bake for another 15–20 minutes, until the cheese is bubbling and golden.

For a more deeply browned top, use the broiler/grill for the final 1–2 minutes, watching carefully.

6. Rest and serve

Allow the lasagna to rest for 10–15 minutes before slicing.

Garnish with fresh parsley or basil and serve warm.

Description Notes

  • Flavor: Naturally sweet, creamy, savory, and herby.
  • Texture: Soft roasted vegetables combined with tender pasta and a creamy, cheesy sauce.
  • Best feature: Roasting the vegetables first concentrates their flavor and prevents the lasagna from becoming watery.
  • The recipe is vegetarian.
  • For a stronger savory flavor, add a little extra Parmesan or a small amount of crumbled feta between the layers.
  • You can make the vegetable filling a day ahead and refrigerate it until you’re ready to assemble.

Helpful Tips

1. Don’t cut the vegetables too large.
Small, evenly sized pieces roast more quickly and distribute better throughout the lasagna.

2. Roast rather than boil.
Boiling adds excess water and can make the finished lasagna soggy.

3. Let the sauce thicken properly.
A thin sauce can make the lasagna watery. It should be creamy and coat the spoon.

4. Don’t skip the resting period.
Resting for 10–15 minutes allows the layers to set, making the lasagna much easier to slice.

5. Add greens if desired.
Baby spinach or chopped kale can be added to the vegetable layer for extra nutrition.

6. Make it vegan.
Use olive oil or vegan butter, plant-based milk, vegan cheese, and vegan Parmesan alternatives.

7. Make it gluten-free.
Use gluten-free lasagna sheets and replace the regular flour with a suitable gluten-free flour blend.

Recipe Q&A

Q: Can I prepare this lasagna ahead of time?
Yes. Assemble it, cover it, and refrigerate for up to about 24 hours before baking. Add a few extra minutes to the covered baking time if it’s going directly from the refrigerator to the oven.

Q: Can I use frozen butternut squash?
Yes. Thaw and drain it well first. Patting it dry helps prevent excess moisture.

Q: Can I use pumpkin instead of butternut squash?
Absolutely. Pumpkin makes an excellent substitute, although it may have a slightly softer texture.

Q: Can I add meat?
Yes. Cooked ground chicken, turkey, or beef can be added between the vegetable layers, although the recipe is designed as a vegetarian lasagna.

Q: Can I make it without béchamel sauce?
Yes. You can substitute a mixture of ricotta and a little milk or use a tomato-based sauce for a lighter version.

Q: Why is my lasagna watery?
The most common causes are vegetables containing too much moisture or a sauce that hasn’t thickened enough. Roast the vegetables until their excess moisture evaporates and allow the lasagna to rest after baking.

Q: Can I make this dairy-free?
Yes. Use unsweetened plant milk, dairy-free butter, and suitable dairy-free mozzarella and Parmesan alternatives.

Q: Is this recipe suitable for kids?
Generally yes. The roasted sweet potato and carrot provide natural sweetness, making the vegetables appealing to many children. Adjust herbs and seasoning to taste.

Q: What cheese works best?
Mozzarella gives excellent melting and stretch, while Parmesan adds savory depth. Ricotta can be added for extra creaminess.

Q: Can I make it more spicy?
Yes. Add ¼–½ teaspoon chili flakes or a pinch of cayenne to the roasted vegetables.

Chef’s Tip

For the best flavor and texture, roast the sweet potato, squash, carrot, onion, and garlic until you see a little caramelization around the edges. That concentrated roasted flavor is what makes this vegetable lasagna especially rich and satisfying.
