🥔 Bacon-Wrapped Baby Potatoes
Crispy, caramelized bacon wrapped around tender baby potatoes, coated in a sweet and savory brown sugar glaze. An easy, irresistible appetizer or side dish!
🛒 Ingredients
- 1½ lb (680 g) baby potatoes
- 12–16 slices thin-cut bacon, cut in half
- 3 tbsp brown sugar
- 1 tbsp maple syrup or honey
- 1 tbsp melted butter
- 1 tsp Dijon mustard
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp black pepper
- ¼ tsp salt
- Toothpicks
👩🍳 Instructions
1. Prepare the potatoes 🥔
Wash the baby potatoes thoroughly. If they’re larger than bite-size, cut them in half. Boil them in salted water for 8–10 minutes, just until slightly tender. Drain and let them cool enough to handle.
2. Prepare the glaze 🍯
In a small bowl, mix together brown sugar, maple syrup, melted butter, Dijon mustard, smoked paprika, garlic powder, and black pepper.
3. Wrap the potatoes 🥓
Wrap each potato with a half slice of bacon, slightly overlapping the edges. Secure with a toothpick.
4. Add the glaze
Arrange the bacon-wrapped potatoes in a baking dish or on a lined baking sheet. Brush generously with the glaze, making sure the bacon is well coated.
5. Bake 🔥
Bake at 400°F (200°C) for 25–35 minutes, turning or brushing with more glaze halfway through. Continue until the bacon is crispy, deeply browned, and caramelized.
6. Get them extra crispy ✨
For the dark, charred edges shown in the photo, switch to broil/grill for 1–3 minutes at the end. Watch closely because the sugar can burn quickly.
7. Serve 🌿
Let them cool for a few minutes, then serve warm. Remove the toothpicks before eating, or leave them in for easy party serving.
💡 Pro Tips
- Thin-cut bacon crisps better around the potatoes.
- Parboiling the potatoes first gives you a soft, creamy center.
- Don’t skip the final broiling—it creates that gorgeous sticky, caramelized bacon crust.
- For a spicy version, add a pinch of cayenne or chili flakes to the glaze.
