Zucchini Halloumi Rolls

Description

Zucchini Halloumi Rolls are a delicious Mediterranean-inspired appetizer made with thin ribbons of tender zucchini wrapped around golden, salty halloumi cheese. They’re lightly seasoned with olive oil, garlic, lemon, and herbs, then baked or grilled until the zucchini is tender and the halloumi is warm and lightly browned.

They make an excellent appetizer, side dish, party snack, or light vegetarian meal.

Servings

4 servings (about 12 rolls)
Prep time: 15 minutes
Cook time: 15–20 minutes
Total time: 30–35 minutes

Ingredients

  • 2 medium zucchini
  • 225 g (8 oz) halloumi cheese
  • 2 tbsp olive oil
  • 1 garlic clove, finely minced
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp black pepper
  • 1 tbsp fresh parsley or mint, chopped
  • Optional: ½ tsp chili flakes
  • Optional: 1 tbsp sesame seeds
  • Lemon wedges, for serving

Instructions

1. Prepare the zucchini

Wash and dry the zucchini. Using a vegetable peeler or mandoline, slice it lengthwise into thin ribbons.

You want the slices thin enough to roll but not so thin that they tear.

2. Prepare the halloumi

Cut the halloumi into approximately 12 small sticks, about 1–1½ cm thick and 5–6 cm long.

Pat the cheese dry with paper towels.

3. Make the seasoning

In a small bowl, combine:

  • Olive oil
  • Minced garlic
  • Lemon juice
  • Lemon zest
  • Oregano
  • Thyme
  • Black pepper
  • Chili flakes, if using

Mix well.

4. Soften the zucchini

Heat a grill pan or skillet over medium heat. Lightly brush the zucchini ribbons with the seasoned olive oil.

Cook for about 30–60 seconds per side, just until flexible and lightly marked.

Do not overcook them—they should remain firm enough to wrap around the cheese.

5. Make the rolls

Place one halloumi stick at one end of each zucchini ribbon.

Roll the zucchini tightly around the halloumi and place each roll seam-side down in a lightly oiled baking dish or on a lined baking tray.

6. Cook

Brush the tops with any remaining seasoned oil.

Bake in a preheated oven at 200°C (400°F) for approximately 12–15 minutes, until the zucchini is tender and the halloumi is hot and lightly golden.

For extra browning, place them under the broiler/grill for 1–2 minutes at the end.

7. Garnish and serve

Sprinkle with fresh parsley or mint and optional sesame seeds.

Serve immediately with lemon wedges.

Recipe Notes

  • Halloumi is naturally salty, so additional salt usually isn’t necessary.
  • Zucchini contains a lot of water, so avoid overcooking it.
  • If your zucchini ribbons are very wide, cut them lengthwise into narrower strips.
  • For easier rolling, lightly grill or pan-sear the zucchini first.
  • Halloumi becomes firm again as it cools, so these rolls are best served warm.
  • For a richer Mediterranean flavor, drizzle the finished rolls with a little extra virgin olive oil and lemon juice.

Tips for Perfect Zucchini Halloumi Rolls

Use a mandoline: It creates evenly thin zucchini ribbons that are easy to roll.

Don’t make the zucchini too thin: Extremely thin ribbons can break when wrapping the halloumi.

Dry the halloumi: Removing excess moisture helps it brown better.

Don’t add much salt: Halloumi already provides plenty of saltiness.

Don’t overbake: The goal is tender zucchini and warm, slightly golden halloumi—not melted cheese.

Add fresh herbs at the end: Parsley, mint, or basil gives the dish a fresh finish.

Optional Variations

  • Spicy: Add chili flakes or a pinch of cayenne.
  • Herby: Use fresh mint, parsley, basil, or dill.
  • Lemony: Increase the lemon zest and finish with fresh lemon juice.
  • Garlic: Add another small garlic clove to the marinade.
  • Tomato: Serve with fresh cherry tomatoes or a tomato-herb salad.
  • Sesame: Sprinkle toasted sesame seeds over the finished rolls.
  • Mediterranean: Serve with hummus, tzatziki, olives, and a Greek salad.

Frequently Asked Questions

Can I make Zucchini Halloumi Rolls ahead of time?

Yes. You can prepare and roll them several hours ahead and refrigerate them covered. Bake just before serving for the best texture.

Can I grill them instead of baking?

Absolutely. Place the rolls seam-side down on a lightly oiled grill or grill pan and cook until the zucchini is tender and the halloumi is warm and browned.

Can I use another cheese?

Halloumi works particularly well because it holds its shape when heated. Paneer can be an alternative, although the flavor and texture will be different.

Do I need to peel the zucchini?

No. The skin is edible and helps the ribbons hold together.

Why is my halloumi too salty?

Different brands vary in saltiness. You can soak the halloumi in cold water for about 30–60 minutes, then drain and pat it dry before using.

Can I air-fry these rolls?

Yes. Air-fry at approximately 190°C (375°F) for about 7–10 minutes, checking early because cooking times vary between air fryers.

What can I serve with them?

They pair beautifully with tzatziki, hummus, Greek salad, roasted vegetables, olives, pita bread, or a fresh tomato salad.

Are they gluten-free?

The basic recipe is naturally gluten-free, but always check the labels of packaged halloumi and other ingredients if you need to avoid gluten strictly.

Can I make them vegan?

Traditional halloumi is dairy-based, so it isn’t vegan. You would need a suitable plant-based grilling cheese to make a vegan version.

Serving Suggestion

For an attractive Mediterranean platter, arrange the warm Zucchini Halloumi Rolls on a serving plate with tzatziki, hummus, lemon wedges, cherry tomatoes, olives, and fresh mint. Finish with a drizzle of olive oil and a light sprinkle of oregano.
