Preheat your oven to 425°F (220°C).
Lightly grease a baking dish with a little olive oil.
Slice the zucchini and yellow squash into even rounds.
Cut the cherry tomatoes in half.
Mince the garlic.
Add zucchini, yellow squash, and tomatoes to a large bowl.
Drizzle with olive oil.
Add minced garlic, salt, black pepper, and fresh rosemary or thyme.
Toss gently until the vegetables are evenly coated. 
Spread the vegetables evenly in the baking dish.

Halfway through, gently turn or toss the vegetables for even roasting.
Sprinkle the grated Parmesan evenly over the roasted vegetables.
Return to the oven for 3–5 minutes, until the cheese is lightly golden and melted.
Remove from the oven and sprinkle with fresh chopped parsley.
Let it rest for 2–3 minutes.
