Ingredients

Base: 1 cup (2 sticks) unsalted butter (softened), 1 cup packed light brown sugar, 1/2 cup granulated sugar

Wet: 2 large eggs (room temp), 1 tsp vanilla extract, 1/2 cup creamy peanut butter

Dry: 1 1/2 cups all-purpose flour, 1 tsp baking soda, 1/2 tsp baking powder, 1/2 tsp salt, 1 1/2 cups rolled oats (old-fashioned)

Mix-Ins: 3/4 cup semi-sweet chocolate chips, 3/4 cup peanut butter chips, 1/2 cup white chocolate chips, 1/2 cup chopped peanuts (optional)

Prep Oven: Preheat oven to 350°F (175°C) and line two large baking sheets with parchment paper.

Cream Butter & Sugars: Beat softened butter, brown sugar, and granulated sugar in a large bowl on medium speed for 2 minutes until fluffy.

Add Wet Ingredients: Mix in eggs one at a time, followed by vanilla extract and peanut butter, beating until smooth.

Combine Dry: In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually stir dry ingredients into wet mixture just until combined.

Fold Mix-Ins: Gently fold in rolled oats, chocolate chips, peanut butter chips, white chocolate chips, and chopped peanuts using a spatula.

Scoop & Bake: Scoop large dough balls (about 3 tbsp each) onto prepared baking sheets, leaving 2 inches between each. Press a few extra chips into the tops for picture-perfect cookies. Bake for 10–12 minutes until edges are golden brown but centers remain soft.

Cool: Let cookies rest on the pan for 5 minutes before transferring to a wire rack to cool completely.
