- ½ tsp cinnamon

- ⅓ cup dried cranberries
- 2 tbsp chopped pecans or walnuts
- 1 tbsp fresh thyme leaves
For the Cranberry Drizzle
- ½ cup cranberry sauce
- 1 tbsp orange juice
- 1 tsp honey
Instructions
- Prepare the squash: Preheat oven to 400°F (200°C). Carefully cut the acorn squash in half and scoop out the seeds. Slice each half into thick wedges.
- Make the glaze: In a small bowl, whisk together olive oil, honey, cinnamon, salt, and black pepper.
- Roast: Arrange the squash wedges on a parchment-lined baking sheet. Brush generously with the honey mixture. Roast for 25–30 minutes, turning once halfway through, until tender and beautifully caramelized.
- Make the cranberry drizzle: While the squash roasts, combine cranberry sauce, orange juice, and honey in a small saucepan. Warm over low heat for 2–3 minutes, stirring until smooth. Add a splash more orange juice if needed to thin it.
- Add the toppings: Arrange the roasted squash on a serving platter. Sprinkle with creamy goat cheese, dried cranberries, chopped pecans, and fresh thyme.
- Drizzle and serve: Spoon the warm cranberry drizzle over the squash just before serving.
