Crispy Potato & Vegetable Sticks

Ingredients

2 medium potatoes (or 1 large potato + 1 small zucchini), grated

1 medium carrot, finely shredded

2–3 green onions (scallions), finely chopped

2 large eggs

3–4 tbsp flour (or cornstarch/breadcrumbs, to bind)

1/2 cup shredded mozzarella or cheddar cheese (optional, for extra flavor)

1/2 tsp garlic powder

Salt & freshly ground black pepper, to taste

2–3 tbsp oil (olive oil or cooking oil, for pan-frying)
Instructions

Prep the Vegetables: Grate the potatoes and place them in a clean kitchen towel or paper towel. Squeeze out as much excess moisture as possible (this ensures they get extra crispy).

Combine: In a large bowl, add the drained grated potatoes, shredded carrot, chopped green onions, eggs, flour, garlic powder, salt, and pepper.

Mix & Shape: Stir everything together until the mixture holds together well. Scoop out portions and shape them into log/cylinder shapes using your hands.

Pan-Fry: Heat oil in a large non-stick skillet over medium heat. Carefully place the vegetable sticks in the pan without overcrowding.

Cook to Golden: Fry for about 3–4 minutes per side, turning gently, until all sides are golden brown, crisp, and cooked through.

Drain & Serve: Transfer to a plate lined with paper towels to drain any excess oil. Serve hot with sour cream, garlic dip, or spicy mayo!
