🧀 Crispy Parmesan Roasted Cauliflower Steaks

Golden, crispy-edged cauliflower steaks roasted with Parmesan, garlic, herbs, and a touch of red pepper flakes. Simple, savory, and incredibly satisfying!

Ingredients

  • 1 large head cauliflower
  • 2 tbsp olive oil
  • 3 tbsp grated Parmesan cheese
  • 2 cloves garlic, minced
  • ½ tsp paprika
  • ½ tsp Italian seasoning
  • ¼ tsp red pepper flakes
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp extra Parmesan, for topping

Instructions

  1. Prepare the cauliflower:
    Preheat oven to 425°F (220°C). Remove the leaves and trim the stem, keeping the core intact. Cut the cauliflower vertically into thick ¾-inch steaks.
  2. Season:
    Place the cauliflower steaks on a lined baking sheet. Brush both sides generously with olive oil.
  3. Add the flavor:
    Combine Parmesan, garlic, paprika, Italian seasoning, red pepper flakes, salt, and black pepper. Sprinkle the mixture generously over both sides of the cauliflower.
  4. Roast:
    Roast for 20–25 minutes, carefully flipping halfway through, until the cauliflower is tender and deeply golden around the edges.
  5. Crisp it up:
    For extra browning, broil for 1–2 minutes at the end, watching closely so the Parmesan doesn’t burn.
  6. Finish:
    Sprinkle with fresh parsley and a little extra Parmesan while hot.

🍋 Serving Idea

Serve immediately with roasted potatoes, green beans, lemon wedges, or a creamy garlic-herb dipping sauce.

Tip: For the best crispy edges, don’t overcrowd the baking sheet. Give each cauliflower steak plenty of space so it roasts rather than steams.
