Ingredients
- ½ cup rolled oats
- ½ cup blueberries, fresh or frozen
- ½ cup low-fat cottage cheese
- ½ cup Greek yogurt
- ½ cup milk of choice
- 1 scoop vanilla protein powder
- 1 tbsp chia seeds
- 1–2 tsp honey or maple syrup
- ½ tsp vanilla extract
- 1 tsp lemon juice
- Pinch of salt
Cheesecake Topping
- 2 tbsp Greek yogurt
- 1 tbsp light cream cheese
- A few blueberries
- Optional: crushed graham crackers
Instructions
- Add oats, blueberries, cottage cheese, Greek yogurt, milk, protein powder, chia seeds, honey, vanilla, lemon juice, and salt to a blender.
- Blend until smooth and creamy. For a little more texture, blend only briefly.
- Pour the mixture into a jar or bowl. Cover and refrigerate for at least 2 hours, preferably overnight.
- For the cheesecake topping, mix Greek yogurt and cream cheese until smooth and creamy.
