🧀 Crispy Parmesan Roasted Cauliflower Steaks
Golden, crispy-edged cauliflower steaks roasted with Parmesan, garlic, herbs, and a touch of red pepper flakes. Simple, savory, and incredibly satisfying!
Ingredients
- 1 large head cauliflower
- 2 tbsp olive oil
- 3 tbsp grated Parmesan cheese
- 2 cloves garlic, minced
- ½ tsp paprika
- ½ tsp Italian seasoning
- ¼ tsp red pepper flakes
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley, chopped
- 1 tbsp extra Parmesan, for topping
Instructions
- Prepare the cauliflower:
Preheat oven to 425°F (220°C). Remove the leaves and trim the stem, keeping the core intact. Cut the cauliflower vertically into thick ¾-inch steaks. - Season:
Place the cauliflower steaks on a lined baking sheet. Brush both sides generously with olive oil. - Add the flavor:
Combine Parmesan, garlic, paprika, Italian seasoning, red pepper flakes, salt, and black pepper. Sprinkle the mixture generously over both sides of the cauliflower. - Roast:
Roast for 20–25 minutes, carefully flipping halfway through, until the cauliflower is tender and deeply golden around the edges. - Crisp it up:
For extra browning, broil for 1–2 minutes at the end, watching closely so the Parmesan doesn’t burn. - Finish:
Sprinkle with fresh parsley and a little extra Parmesan while hot.

Serve immediately with roasted potatoes, green beans, lemon wedges, or a creamy garlic-herb dipping sauce.
Tip: For the best crispy edges, don’t overcrowd the baking sheet. Give each cauliflower steak plenty of space so it roasts rather than steams.
