🛒 Ingredients
For the Dough:
-
Bread Flour (or All-Purpose Flour): 350g (~2¾ cups)
-
Warm Milk: 150 ml (~⅔ cup)
-
Sweetened Condensed Milk: 80g (~¼ cup)
-
Instant Dry Yeast: 5g (~1½ tsp)
-
Egg: 1 large (room temperature)
-
Unsalted Butter: 35g (~2.5 tbsp, softened at room temp)
-
Fine Salt: ½ tsp
For the Brush / Egg Wash:
-
1 Egg + 1 tbsp Milk (whisked together for egg wash) OR
-
Melted Butter + 1 tbsp Condensed Milk (to brush warm loaf right after baking for high shine and extra sweetness)
👩🍳 Step-by-Step Instructions
1. Mix & Knead the Dough
-
In a large bowl or stand mixer, whisk together warm milk, sweetened condensed milk, egg, and instant yeast.
-
Add the bread flour and salt. Mix until a shaggy dough comes together.
-
Add the softened butter and knead for 10–12 minutes (by hand or mixer dough hook) until the dough is smooth, elastic, and non-sticky (passes the windowpane test where it stretches thin without tearing easily).
2. First Rise (First Proofing)
-
Form the dough into a smooth ball. Place it in a lightly oiled bowl and cover with plastic wrap or a damp towel.
-
Let it rise in a warm spot for 1 to 1.5 hours, or until it doubles in size (Panel 1).
3. Divide & Shape
-
Gently punch down the proofed dough to release air bubbles.
-
Divide the dough evenly into 6 or 7 equal portions.
-
Shape each portion into a smooth, round ball or roll it lightly into a small log.
-
Grease a 9×5-inch glass or metal loaf pan (or line with parchment paper). Arrange the dough balls/logs side-by-side in a row inside the pan (Panel 2).
4. Second Rise (Second Proofing)
-
Cover the pan loosely with plastic wrap or a damp cloth.
-
Let it rise in a warm place for 45–60 minutes until the dough expands to touch and fill the pan (Panel 3).
5. Bake
-
Preheat your oven to 350°F (175°C).
-
Gently brush the top of the risen loaf with egg wash for a shiny deep-golden finish.
-
Bake for 25 to 30 minutes until the top is deep golden brown (Panel 4). (If the top browns too quickly, cover loosely with aluminum foil for the last 10 minutes).
6. Glaze & Serve
-
Remove from the oven and immediately brush the top with melted butter mixed with condensed milk while still hot for extra shine and softness.
-
Allow to cool slightly in the pan before lifting out to slice or pull apart to reveal the cloud-like, feathery soft crumb (Panels 5 & 6).
